v1.34.4: treat source_organism + species as one canonical axis (#306) (#309)

The source-proteome axis lives in two IEDB columns at different granularity:
source_organism (strain-level) and species (species-rank). They were consumed
inconsistently — pmhc's 'unresolved source organism' warning keyed off species
alone, while the #46 source_species filter keyed off source_organism alone, so
a row with one curated but not the other behaved differently in each.

Now both consumers coalesce: the pmhc warning fires only when BOTH are blank,
and source_species resolves when EITHER is populated (resolving ~547k rows that
had species but blank source_organism). Partial #306 (consumer consistency);
full column deprecation + #307 animal-dataset backfill remain as follow-ups.
