DESIGN: decide consistency model (metadata-only run + reconcile-at-upload)

- run becomes a fast, stat-based metadata snapshot (size/mtime/inode); content
  hashing, CDC, dedup, compress, encrypt and upload move to the async worker, so
  each changed file is read once. OS/filesystem snapshots intentionally avoided.
- Window handling: re-stat at read time; if changed, store current bytes and
  flag changed-during-backup (next run reconciles); run never fails on a moving
  file. Guarantee is per-file consistency, not cross-file atomicity; optional
  --verify re-hashes.
- Versions seal on upload completion. Schema: per-file stat signature +
  per-(chunk,destination) upload status. Note the run behavior change in status.
