DESIGN: clarify catalog-leak tradeoff (content/keys stay safe)

A stolen catalog reveals the file tree (names/structure/sizes/versions) but
never file contents or keys (sealed to the mnemonic); low-severity on the host
and shipped encrypted off-host (§7). Reframes the §5 tradeoff accordingly.
