docs: document device-level attribute coverage

The device-property coverage work (4ef1c66) extended IIO coverage
tracking to monkey-patch iio.DeviceAttr in addition to iio.ChannelAttr,
so device-level attributes are now tracked alongside channel attributes,
the per-context JSON gains device_attr_reads_writes / channel_attr_reads_writes
sections, and the markdown report breaks out device_coverage, channel_coverage,
and total_coverage per system. The cli and fixtures docs still described the
feature as channel-only; update both to match the current behavior.
