chore: response-shape benchmark probe + make bench target (#80)

Commits the OU-77 measurement probe as a reusable tool for human-driven runs before releases. Validates response payload sizes against the 4000 tk red-flag threshold across 8 typical + 3 stress shapes.

- bench/response-shapes/probe.py: stdlib-only Python; spawns ./ouroboros, seeds deterministic fixture (2 projects, 15 KB docs, 15 items), measures 11 shapes, prints markdown table.
- bench/response-shapes/README.md: usage + threshold convention.
- Makefile: `bench: build` target.

Not run in CI; that's tracked separately as OU-211 (level 2: automated regression gate).
