fix: remove conflicting hatch sources config causing empty wheel

The combination of sources = ["src"] and packages = ["src/yoker"]
caused hatch to build empty wheels (only dist-info, no source files).

Removed sources = ["src"] - packages = ["src/yoker"] is correct by itself.

Bumped version to 0.3.1 to fix the broken 0.3.0 release on PyPI.
