docs(changelog): refresh v2.0.0 entry with everything since RC1

CHANGELOG was still the RC1-day snapshot (core rewrite + perf table).
Restructure into a complete v2.0.0 entry covering the 56 commits
between v2.0.0-rc1 and HEAD:

- Module path /v2 noted up front
- New "server/" package: production-ready wrapper, lifecycle hooks,
  health endpoints, echo (httpbin-style) server with a full endpoint
  table
- New "pkg/render" package: stateless helpers + Responder + pluggable
  TemplateRenderer (merged from gookit/respond, two upstream bugs
  fixed during merge)
- New "pkg/sse" package: Stream/StreamWith, lifecycle hooks, Hub for
  keyed push/broadcast with backpressure
- Added Context.Bind* helpers and FastSetCookie variadic opts
- Echo server now returns 405 with Allow on method mismatch
- Removed pkg/websocket stub, _examples/proxyreq, _examples/fastrux
- Fixed section enumerates the 4 CodeQL alerts addressed before
  release, the render Auto XML fall-through, and the two respond
  Content/Data header bugs
- Added test-coverage table (internal/core 95.4%, etc.)
