ci: drop broken npm bump, use pnpm for release publish

The Node 22.22.2 bundled npm is broken (missing promise-retry), causing
'npm i -g npm@latest' to crash before it can upgrade itself. Drop the
bump step entirely and run the release script via pnpm — changesets
auto-detects the pnpm workspace for publishing.
