docs: drop README line-number anchors that drift on every source change (#353)

The line-number anchors I added in #348 (e.g. genome.py#L573) were
already off by 6 lines after #350 (v2.9.6) grew Genome.protein_sequence's
docstring. The links still landed inside the right file but no longer
on the right def, and re-pinning them after every release wasn't
sustainable.

Replaced every `<file>.py#Lnnn` with `<file>.py`. The clickable target is
still the method name; readers land on the source file and can jump
with their browser's outline / symbol search. The clickable text is the
authoritative breadcrumb.

Docs-only; no version bump.
