constants: expand vita3k submodule tracking

Track the full set of vita3k vendored dependencies (concurrentqueue,
dirent, glslang, googletest, libadrenotools, psvpfstools, substitute,
and others) and namespace the related SHA variable names by parent
submodule so nested submodules can be distinguished.
