feat(ci): consolidate test+webui into one job and include webui coverage (#351)

Merges the previously-split `test:` and `webui:` jobs into a single
job so vitest coverage and gcovr coverage can ship in one Coveralls
upload via the action's multi-file `files:` input. The `build:` and
`debug:` matrix jobs continue to consume the `webui-dist` artifact;
only the producer changes.

- enable v8 coverage in webui/miner via vitest config (lcov reporter)
- drop the redundant pnpm pre-build that was dead weight for make coverage
- drop the COVERALLS_REPO_TOKEN env override (action defaults work for the
  other workspace repos against the same Coveralls org)
- add pip cache to build/debug matrix jobs to mirror the shared workflow
- update summary needs to drop the now-folded webui job
