ci: stop re-running tests for the coverage upload

Coverage was running the entire 912-test suite a second time on PHP 8.5
just to produce build/logs/clover.xml. Fold that work into the matrix —
the 8.5 row is now the only one configured with Xdebug, runs PHPUnit
once with coverage enabled, and uploads to Coveralls in the same job.
The other matrix rows still run uninstrumented so the matrix stays fast.

Removes a duplicate ~3-minute job.
