Fix warning cleanup in node and pair UI (#841)

* Fix warning cleanup in node and pair UI

Use raw pointer access for MAP_BACKING in sonde-node to avoid static_mut_refs warnings, and rename the sonde-pair-ui library target so Cargo no longer emits Windows output filename collision warnings.

Closes #824.

Extend the default tracing EnvFilter to include the renamed sonde_pair_ui_backend target while retaining the old target name for compatibility.
