tests: switch from Jest to Vitest, unpin TypeScript, fix CI

Replace the Jest stack (`jest`, `ts-jest`, `@types/jest`) with `vitest`
and `@vitest/coverage-v8`. The test imports from `vitest` and the
`ItunesHelper` class mock uses `vi.fn(function (this: ...) { ... })`
so it works as a constructor under Vitest 4 (which rejects
`mockImplementation(arrowFn)` when the mock is called with `new`).

Drop the temporary TypeScript 5.x pin from `.wiswa.jsonnet` and the
`moduleResolution: node` override in `tsconfig`. The `Tests` workflow
runs `yarn vitest run --coverage`.
