* fix: update Sphinx and myst-parser version constraints for compatibility

Update pyproject.toml docs extra to align with Dependabot's myst-parser 5.0.0 upgrade.

myst-parser 5.0.0 requires Sphinx >=8.0.0, which conflicts with our current
<8.0.0 constraint. This update resolves the conflict.

Changes:
- sphinx: 6.0.0-8.0.0 ? 8.0.0-10.0.0
- myst-parser: 1.0.0-3.0.0 ? 5.0.0-6.0.0
- sphinx-rtd-theme: 1.3.0-3.0.0 ? 1.3.0-4.0.0

This allows PR #43 (Dependabot python-dependencies) to merge without conflicts.

* fix: tighten sphinx-rtd-theme lower bound for Sphinx 8 compatibility

Update sphinx-rtd-theme requirement to >=3.1.0 to ensure compatibility
with Sphinx 8.0.0+. Earlier versions may not support Sphinx 8.

Addresses CodeRabbit feedback on PR #44.
