refactor(display): cut over to breadboard bb_display (#346)

- delete components/display/ entirely (display.c, font8x16.c, logo_bits.c + headers)
- add src/ui/ui.c + ui.h: tm-specific display logic routed through bb_display_*
  - splash: logo blit + text on st7735 (160x80), centered text on ssd1306 (128x32)
  - prov screen: ssid/password layout adapts to display height
  - status: scrolling 3-page virtual strip on st7735; paging 2-screen on ssd1306
- src/CMakeLists.txt: add ui/ui.c, select bb_display_st77xx or bb_display_ssd1306 per board
- CMakeLists.txt: exclude bb_display_ek79007 + bb_display_ili9341 on tm targets
- board headers: add -1 stub pins for absent display type per board
- sdkconfig/bitaxe-*: ssd1306 height=32 delta
- CLAUDE.md: drop stale 'display remains local' note; update components list
