snapcraft: prune unused transitive libraries from the snap

The snapcraft library linter flagged eight shared libraries that the
bpmdetect binary never references but that snapcraft pulled in as
transitive Depends of staged packages: alternate ABI variants of
SoundTouch, ICU, and Highway, plus Theora and zvbi-chains pulled in
by libavcodec60 for video paths bpmdetect does not exercise. Drop
them at prime time using a multiarch glob so the same exclusions
apply to amd64 and arm64.
