ci(aur): render .SRCINFO with sed; bump checked-in PKGBUILD to v1.0.4 (#96)

The auto-publish workflow was using a docker container + makepkg to
regenerate .SRCINFO, which fails on hosted runners with
'You do not have write permission for the directory \$BUILDDIR'. Replace
that with a deterministic sed transform on the existing .SRCINFO
template — same end result, no docker.

Also pull the in-repo PKGBUILD / .SRCINFO up to v1.0.4 (the manual AUR
push already shipped this content; this just keeps the source of truth
in sync) and switches the maintainer email to jlqueguiner@gladia.io.
