builder: handle nil collectors and options

Builder methods now accept nil inputs without panicking.
- Build returns ErrNilCollector for nil top-level collectors and nil
  sub-collectors from MultiCollector, while continuing to process the rest.
- WithJSONSchema returns ErrNilSchemaReader when the schema reader is nil.
- WithInheritance silently skips nil InheritanceOption entries.
- Add ErrNilCollector and ErrNilSchemaReader sentinel errors.
