refactor: extract route JSON builders + golden tests (TA-291) (#245)

- add routes_json.h: snapshot structs and builder prototypes for all 7 GET endpoints
- add routes_json.c: pure build_*_json() functions — no esp-idf calls, no i/o
- refactor handlers in routes.c to collect snapshots then delegate to builders
- add test/test_host/test_routes_json.c: 13 unity golden tests covering happy path + edge cases for stats, pool, diag/asic, knot, settings
- wire test_routes_json into test_main.c
- add routes_json.c to CMakeLists.txt srcs and platformio.ini native build_src_filter
- add -Icomponents/taipan_web/include to native build_flags

closes TA-291; locks json shapes finalized in TA-281/282/283/284/286/287
