ci(playwright): shard suite across 3 matrix runners

Splits the Playwright job into 3 parallel runners via
strategy.matrix.shard + pytest-shard. Each runner executes ~1/3 of the
playwright nodeids (parametrized variants land on different shards
because they're separate nodeids).

Adds pytest-shard>=0.1.2 to dev deps; uv.lock regenerated.

Coveralls flag-names per shard (tests-playwright-1/2/3); the existing
parallel-finished trigger in coveralls-finish.yml merges them after all
matrix legs complete.

Wallclock target for the playwright job: ~max-shard-time (~3-5 min),
down from ~10 min single-runner.
