test(api): add comprehensive /chat endpoint coverage

Implemented comprehensive test coverage for GET /api/chat endpoint with:
- TestGetChats_Success: validates basic chat listing and required fields
- TestGetChats_UnseenFiltering: verifies 31-day window for unseen message counts
- TestGetChats_Pagination: validates proper list formatting and response structure
- TestGetChats_CompletedChats: tests handling of completed/closed chats with includeClosed param
- TestGetChats_EdgeCases: tests authentication, invalid params, deleted users, and error handling

These tests validate:
- Proper authentication and authorization checks (401 for unauthenticated requests)
- Correct JSON response structure with all required fields
- 31-day lookback window for unseen message filtering (as per recent fix)
- Handling of deleted users in chat names
- Edge cases with invalid timestamps and parameters
