* Document canonical node and modem hardware

Update contributor-facing docs so the canonical node build is the sonde carrier board plus a Seeed Studio XIAO ESP32-C3, and the canonical modem build is the carrier board plus a Seeed Studio XIAO ESP32-S3 with the local OLED display and button wiring.

Clarify that the carrier-board node wiring uses GPIO6/GPIO7 as the canonical hardware mapping, while the firmware reads i2c0_sda/i2c0_scl from NVS and otherwise falls back to the compiled-in defaults. Also tighten the carrier-board README wording for the generic XIAO module references.
