refactor: migrate remaining cJSON usage to bb_json, drop json REQUIRES (#139)

- routes.c: complete cJSON → bb_json migration (TA-177)
- stratum.c: migrate JSON-RPC parse/emit to bb_json (TA-178)
- drop json from REQUIRES in src/, taipan_web/, stratum/ CMakeLists (TA-180)

Closes TA-177, TA-178, TA-180.
