docs: refresh README + CLAUDE.md after bb_json / bb_info / bb_ota_validator decoupling (#50)

- update bb_ota_validator component row to reflect the state-machine API
- swap the portability-discipline example from bb_ota_validator to bb_info,
  since bb_ota_validator no longer exposes a strategy-struct API post-#49
