docs: refresh README and CLAUDE.md for v0.5.0 (#41)

update components table (13 bb_-prefixed components), rewrite
portability section (bb_ota_validator strategy api demonstrates the
portable-header + backend-default pattern), bump host test count to
86, drop stale wifi_prov references.
