docs.conf: add intersphinx mappings for archiver-stats and rich

Let Sphinx resolve cross-references to the archiver-stats base classes
exposed through patreon_archiver.typing.Stats and
patreon_archiver.status_display.StatusDisplay, and to the underlying
rich objects they wrap. Mirror the same override in .wiswa.jsonnet so
Wiswa regen stays idempotent.
