project: add rich live status display and safer yt-dlp shutdown

Replace the yaspin spinner with a Rich-based live status display that
combines a spinner line with aligned live statistics: total posts
fetched, the yt-dlp URI currently being downloaded with its cumulative
n/total position, and running per-type processed counters. Dispatch
yt-dlp URIs one per download call so the display can report the URI in
flight, and expose the stats surface as a public Stats dataclass.

Drop the -L / --yt-dlp-arg-limit CLI option since yt-dlp URIs are now
handed off one at a time. During an active download, the first Ctrl+C
or SIGTERM now waits for the current download to finish to avoid
corrupting the file and shows a transient warning; a second signal
force-quits. Update README, man page, and changelog accordingly, and
cover the new behaviour with additional tests.
