Fix column_type compat: use default_kind only for column filtering

The column_type field doesn't exist in system.columns on all ClickHouse
versions (e.g., 26.1.x Altinity Antalya). This caused dynamic write tool
discovery to fail silently. The default_kind field is universally available
and covers all exclusion cases (MATERIALIZED, ALIAS).
