* docs: recommend embedding ctx->timestamp in send_async payloads

Add best-practice guidance to bpf-environment.md (send_async section)
and protocol.md (store-and-forward section) recommending that BPF
programs always include ctx->timestamp in async payloads so handlers
can correlate measurements to collection time rather than delivery
time.

Includes a code example showing the recommended pattern.

* docs(bpf): clarify BPF endianness in async timestamp example

Drop "serialized" wording and add inline comment noting BPF is
little-endian so handlers must parse accordingly.
