fix: remove postinstall from modtools layer package.json

Netlify auto-installs deps in the base dir (iznik-nuxt3/modtools/)
before running the build command. The postinstall "nuxt prepare" failed
because nuxt is a parent-app dependency, not a layer dependency. The
build command already handles nuxi prepare in the correct order.
