fix: add Go-side shutdown flag to prevent callbacks after destroy

The Go event reader goroutine and in-flight request goroutines could
try to invoke the Dart callback after LibwalletDestroy, causing the
Dart VM to crash with "Callback invoked after it has been deleted."

Add atomic shutdown flag set in LibwalletDestroy before closing the
event FD, checked in all callback paths (ffiSink.SendResponse,
LibwalletRequest response, event reader).
