fix: correct sensors/index.html merge artifact and update JSONEDITOR_THEME docs

- Remove duplicate "Upload data" block from sensors/index.html that was
  left over from a bad merge (it incorrectly contained Edit sensor form
  fields instead of upload UI)
- Fix indentation: move {% if user_can_update_sensor %} inside the
  .sidepanel wrapper, matching the structure introduced by main branch
  commit 4ef61faa (sidepanel-label / sidepanel-content)
- documentation/configuration.rst: list "spectre" first (it's now the
  default), remove bootstrap4/bootstrap3/tailwind entries, update
  Default to "spectre"

All 4 json_attributes_editor tests pass.
