fix: sanitize URL-encoded profile link URLs (#461)

* fix: sanitize URL-encoded profile link URLs to prevent redeployment failures

Old profiles stored URL-encoded links (e.g., https%3a%2f%2ftwitter.com%2fuser).
When garbage collected profiles are redeployed, the Catalyst rejects them because
encoded URLs don't match the LinkUrl validation pattern. This adds a sanitizeLinks
step that decodes such URLs when serving profiles, and drops links that remain
invalid after decoding.

* refactor: use BDD-style describe/it in sanitizeLinks tests and fix linting
