feat(ci): multi-board CI, env rename, coveralls, sdkconfig cleanup (#37)

- rename PlatformIO envs to board names (esp32s3→tdongle-s3,
  bitaxe601→bitaxe-601, debug suffixes updated)
- add -DBOARD_TDONGLE_S3 build flag and #error guard for unknown boards
- split CI into test + matrix build jobs, add coverallsapp/github-action
- release workflow: matrix build with artifact upload, dynamic release body
- replace auto-generated sdkconfigs with hand-authored deltas in sdkconfig/
- fix bitaxe-601-debug dropping linker flags (build_flags override bug)
- gate debug builds behind workflow_dispatch input
- add Makefile with build/test/coverage/flash targets
- remove config.h test fallback (provisioning handles config)
- gitignore auto-generated sdkconfig.<env> files
