fix: set participant.name from displayName and allow metadata updates

Extract displayName from metadata and pass it as the LiveKit token
name field so participant.name is populated. Remove canUpdateOwnMetadata
restriction on streamer and watcher tokens to allow display name updates
from Cast2 web clients. Bot tokens remain locked down.
