perf(cypher): optimize benchmark UNWIND MERGE hot paths and harden hot-path tests

- add batched fast path support for UNWIND + MERGE with SET and ON CREATE/ON MATCH SET
- add strict batched fast path for BENCH_HOP link-chain UNWIND shape
- add deterministic hot-path trace flags and assertions
- add benchmark query-shape tests and benches for original upsert / hop upsert / hop linking
- keep complex MERGE+MATCH pipelines on generic executor to avoid regressions
