Add categories=toolhive to all CRD resource markers (#4470)

* Add categories=toolhive to all CRD resource markers

Only MCPRegistry had the toolhive category, which meant
`kubectl get toolhive` would not list the other CRD types.
Adding the category to all 9 remaining CRDs enables users to
query every ToolHive resource with a single command.

* Regenerate CRD manifests with categories=toolhive

Run `task operator-manifests` to update generated CRD files and Helm
templates to include the categories marker added in the previous commit.
