tests: mock is_binary for binaryornot 0.6.0 compatibility

binaryornot 0.6.0 changed behavior and now tries to open the file
directly in is_binary(). When Path is mocked, the stringified mock
path doesn't exist, causing FileNotFoundError. Mock is_binary in
tests that use mocked Path objects to avoid hitting the real
filesystem.
