docs: replace uBPF references with sonde-bpf (RFC 9669) (#312)

The project uses \sonde-bpf\, a custom RFC 9669 compliant BPF
interpreter, not uBPF. Update all documentation and code comments
to reflect this. Add rbpf to the Related Work section as prior art.

Files changed:
- README.md — intro, reference table, further-reading link, related work
- docs/overview.md — intro paragraph, further-reading link
- docs/why-bpf.md — summary, runtime section, conclusion
- docs/protocol.md — remove uBPF mention from LDDW note
- docs/bpf-environment.md — test harness description
- docs/node-design.md — interpreter selection (resolved, not open)
- crates/sonde-node/src/bpf_runtime.rs — trait doc comment
