docs: add node and gateway BOMs (Rev A) (#309)

Add Bills of Materials for both the battery-powered sonde node
(\
ode-bom.md\) and the USB-attached ESP-NOW gateway
(\gateway-bom.md\). Both follow the same format: numbered sections,
multi-vendor sourcing tables, block diagrams, and cost estimates.
