fix: Set default production Gatekeeper URL and prevent blank screen (#226)

Commit .env.production with VITE_GATEKEEPER_URL=https://archon.technology
so the Android APK and production web builds have a working default.

Wrap initialiseServices in try/catch so the app still renders when the
gatekeeper is unreachable, allowing users to change the URL in Settings.

Closes #180
