fix(providers): add minimax- to AnthropicProvider exclusion list so MiniMax models are routed correctly (#223)

Without this, AnthropicProvider.ownsModel() claimed ownership of MiniMax-M2.5
models (the fallthrough `return true`), causing detectProvider() to return
Anthropic first. This cleared the MiniMax env vars instead of setting them,
routing requests to Anthropic's real endpoint and showing claude-sonnet-4-6
in system:init instead of MiniMax-M2.5.
