Fix the upgrade tests (#4053)

Currently, all the upgrade tests in openshift-ci are failing, on
hack/check_pod_upgrade.sh, because the image name in the hco-operator
pod's status is the architecture specific image, while the image we are
searching for is the multi-arch image, and so we don't find it.

This PR fixes this issue by searching the `spec.containers[*].image`,
instead of the image in the container status.

Checking the status is maybe more accurate check, but is not possible
now, and checking the spec image is safe inough.
