Fix README JSON assets example to use correct object format (#712)

* Fix README JSON assets example to match actual object format

The code expects each entry to be an object with a "src" field, not a
plain string. Update the example to reflect the correct format.

* Tidy README: fix heading level, add code block languages, clarify json-dir

- Fix ###### html-dir heading to ##### (consistent with all other config headings)
- Add json language tag to the main config and img-to-picture code blocks
- Remove informal .... ellipsis from the img-to-picture example
- Add a sentence to json-dir explaining the src field, attributes, and sync/async/preload categories
