chore: remove unused Invenio default files and Sphinx infrastructure

* Remove docs/ directory: Sphinx was never used in this project,
  it was inherited as an Invenio default.
* Remove Sphinx (>=4.5.0) from dev dependencies and update uv.lock
  (drops sphinx, alabaster, imagesize, sphinxcontrib-* packages).
* Remove sphinx-build call from scripts/test pretests.
* Remove --doctest-glob="*.rst" and docs/ from pytest testpaths.
* Remove conf.py from ruff extend-exclude.
* Remove AUTHORS.rst, RELEASE-NOTES.rst, .gitmessage.txt: unused
  Invenio defaults not maintained in this project.
* Simplify CONTRIBUTING.rst: remove references to Invenio style guide.
* Remove [*.rst] block from .editorconfig (no longer relevant).
* Convert rst files to markdown and update contents.
* Remove useless labeler and stale github workflows.
