Exclude coverage package from JaCoCo instrumentation to fix build failure (#454)

The CoverageBroadcastReceiver class interacts with JaCoCo internals via
reflection and cannot itself be instrumented. Add exclusion for **/coverage/**
in both AGP's variant instrumentation config and the offline Maestro
instrumentation fileset.
