Fix JavaFX controller tests failing in headless environments (#349)

Platform.startup() was throwing UnsupportedOperationException when no
display is available because it tried to initialize the GTK backend.
Use the Monocle headless backend via openjfx-monocle test dependency
and system properties so controller tests work without a display.
