ci: use raw LLVM tools for C++ FFI coverage report

cargo-llvm-cov report only searches for executable object files, but
sonora-ffi is a staticlib — no executables are produced. Switch to using
RUSTFLAGS=-Cinstrument-coverage for the build and llvm-profdata/llvm-cov
directly for report generation. The C++ test binary (apm_unit_tests) has
the instrumented Rust code linked in and serves as the object file for
llvm-cov export.
