ci: fix C++ FFI coverage by force-linking LLVM profiling runtime

The instrumented libsonora_ffi.a has a weak-undefined __llvm_profile_runtime
symbol. GCC's linker won't pull objects from archives to satisfy weak
references, so the LLVM profiling atexit handler was never linked in and
no .profraw files were generated.

Fix: extract profiler_builtins objects from the Rust toolchain's rlib,
repackage as a standalone archive, and force-link via --whole-archive
in LDFLAGS so GCC unconditionally includes the profiling runtime.

Also add a diagnostic step to verify .profraw files are generated.
